Tonight I decided to experiment a bit, which typically means I go off on a whim and make something up then try to remember exactly what I put in the recipe later! I got a box of chocolate covered malt balls, aka Whoppers, a few days ago and figured I should make some cupcakes out of the surviving malt balls.
I wanted to make lighter cake with an airy texture to really create a similar texture as the inside of the whoppers. My husband abhors Whoppers so his opinion doesn’t go very far for this flavor, but I will see if I can muster up some cupcake testers tomorrow to get a more broad spectrum opinion of these guys. I enjoyed the light texture of the cake that allowed for the slight crunch of the chocolate covered malt balls to be recognized. The frosting is vanilla buttercream with the malt balls melted, pureed, and then added to the buttercream. This also allowed the malt ball to just have the chocolate melt off and still stay crunchy, and maintain a bit of crunch in the frosting! Yes, I like crunchy!
